Rachel’s Kitchen

Rachel’s Kitchen is a small Las Vegas chain that’s been serving healthy breakfast, lunch, and dinner since 2006. This place prides itself on helping you and your family make smart dining decisions that are delicious and wholesome for your body. You can order gluten-free options for many of their yummy dishes, and you’ll even find plenty of vegetarian fare to chow down on, too. 

Breakfast is served all day at Rachel’s Kitchen, so stop by here throughout the day for the breakfast wrap served on a whole-wheat tortilla, a protein-filled scramble, and homemade breakfast potatoes or fresh fruit as your side. And be sure to grab a fresh-squeezed juice or smoothie made with fresh veggies and fruits in fantastic blends that are healthy and scrumptious.

For lunch and dinner, order one of their stacked salads, which you can get made with all-natural, 100% hormone-free grilled chicken, or grab a gourmet sandwich on wheat sourdough, gluten-free bread, ciabatta, or a lettuce wrap. They also serve delectable pastas, like the Signature Pasta, which is penne with chicken, eggplant, sun-dried tomatoes, and mushrooms.

You can find a Rachel’s Kitchen at eight locations around Las Vegas and Henderson.

VegeNation

If you’re looking for a fully plant-based meal, then VegeNation is your new go-to spot. This community restaurant uses plant-based meats, cheeses, and ice cream for the dishes on their menu, which is full of meals you know and love, just in plant-based form. VegeNation also partners with local vendors, producers, and plant-based cheese and meat artisans to bring you the freshest local ingredients. Plus, they happily accommodate those who need or prefer gluten-free alternatives.

On the menu, you’ll find fantastic brunch dishes like vegan chicken and waffles, tofu scramble with roasted veggies, crepes, and a vegan breakfast burrito. For lunch and dinner, you can grab starters like Bao Wow, steamed bao dumplings with tofu, vegan fried gyoza dumplings, or buffalo cauliflower wings. Grab one of their amazing salads, or order a unique pizza, like the vegan mac ‘n’ cheese pie. Or, have an entree like “chicken” pot pie gnocchi, eggplant lasagna, or a vegan mac ‘n’ cheese-topped burger. Add to your meal sides like a black-bean-chili-stuffed sweet potato or loaded sweet potato tots. 

To drink, order one of their awesome adults-only cocktails, a smoothie made fresh, or a kombucha on draft. Finish your meal, no matter the time of day, with one of their plant-based desserts. Get s’mores for the table, tarts, cobbler, molten lava cake, or a brownie sundae, among many other mouth-watering dessert choices.

There are two VegeNation locations. Visit their downtown Las Vegas destination at 616 E. Carson Ave. Suite 120. Or, head to their Henderson location at 10075 Eastern Ave.

MTO Cafe

Comfort food doesn’t always have to be unhealthy. In fact, at MTO Cafe, you can get some of your favorite comfort food dishes made with wholesome ingredients. This restaurant serves up dishes with influences and flavors from other cuisines, too.

If you’re coming here for breakfast, order the Body Builder omelet for something savory, flavorful, and protein-packed, or get the Yoga Pants omelet for a breakfast a little on the lighter side. Opt for avocado toast or chicken and waffles for classic brunch staples. At the Summerlin location, you can also get a smoothie bowl made with a pitaya base or a parfait of yogurt topped with fresh fruit, granola, and more. 

MTO is great for lunch and dinner, too. Grab one of their sandwiches, like the BLTAE in wrap form, or order the strawberry salad. If you’re feeling Tex-Mex, then grab a Guacamole Green Bowl, which is made with grilled chicken, tomatoes, red onions, spring mix, romaine lettuce, red cabbage, lime, and a cilantro-lime dressing.

MTO has two locations. You can find their downtown location at 500 S. Main St. Suite 150 in Las Vegas, or you can visit them at 10970 Rosemary Park Suite 100 in the Summerlin neighborhood.

Parsley Modern Mediterranean

Mediterranean food is known to be incredibly healthy, even helping prevent cardiovascular disease. So Parsley Modern Mediterranean is a great place for flavorful food that doesn’t compromise on nutrition. Start by choosing from one of their signature combos, chicken curry over rice, steak tagine in a pita, hummus-shawarma bowl, or pita-based “nachos.”

Or, go the made-to-order route where you pick a protein, like chicken shawarma, chicken schnitzel, steak shawarma, beef kabob, tuna, falafel, or a veggie-based combination made up of options like eggplant salad, quinoa salad, taboule, hummus, or olives. Then, you get to choose whether you want a wrap, salad, pita, sandwich, salad, rice bowl, or platter. Top it with fresh veggies and herbs, including parsley, cabbage salad, chickpeas, spicy carrots, and tomatoes. Finally, add a yummy dressing to it, such as tzatziki yogurt-cucumber sauce, tahini sauce made from sesame seeds, olive oil and lemon, and more.

There are three awesome locations for Parsley Modern Mediterranean around the Vegas area. Find them at 6420 S. Peco Road in nearby Paradise, at 4985 W. Tropicana Ave. in the Spring Valley area, or at 9460 W. Flamingo Road in the Summerlin area of Las Vegas.

Greens and Proteins

Greens and Proteins is all about well-balanced, protein-packed meals that are great for athletes and non-athletes alike. This place serves breakfast, pizza, burgers, smoothies, and build-a-meal options where you can customize a dish just for you. For breakfast, try a parfait or acai smoothie-base bowl, a vegetarian-friendly breakfast burrito, or a homemade frittata. If you’re feeling pizza, order one of their delicious recipes on your choice of pita, lavash wrap, or gluten-free thin crust. Or, grab a turkey burger, vegan Impossible burger, or bison.

This local chain has seven locations around Vegas, so you’re never too far from a healthy and delicious meal.
